Beef Saltado, also referred to as "Lomo Saltado" is a popular South American dish fusing Peruvian and Asian ingredients and cooking techniques. At it's core, Lomo Saltado is strips of beef stir-fried with tomatoes, red onions, Peruvian chilies, soy sauce, vinegar, ginger and cilantro. Often served alongside French Fries (seems random... see below!) and rice, Lomo Saltado is a savory dish that packs a heat-punch.
What really makes this dish unique is it's seasonings. In this recipe, found on TheLatinKitchen.com, and created by Ingrid Hoffmann, host of the Cooking Channel's Simply Delicioso, we use red wine vinegar, soy sauce, and fresh garlic. Ingrid does not include the spicy yellow Peruvian chilies (aji amarillo), but feel free to add a couple when sauteeing the veggies. If you can't find these chilies you can use other hot peppers, or, if you prefer less spice, you can use mild yellow peppers.

- 1 tbsp canola or vegetable oil
- 1 flank steak, sliced into 1 1/2-inch wide strips
- 1 large red onion, quartered and thinly sliced
- 1 - 1 1/2 lbs large tomatoes, cored, halved, and sliced
- 1 clove garlic, finely minced
- Salt & pepper to taste
- 2 tsp soy sauce
- 1 tsp red wine vinegar
DirectionsHeat the oil in a large wok or skillet over medium-high heat. Add the steak and stir-fry, cooking until it is browned on all sides, about 8 to 10 minutes. Transfer the steak to a plate and set it aside. Add the onion, tomato, garlic, (peppers, if you're adding them), salt, and pepper to the same skillet and cook it until the onion is soft and the tomato start to break down, 2 to 4 minutes. Return the beef to the skillet and add the soy sauce and vinegar. Cook for 1 minute, season with salt and pepper to taste and serve. Cut up some fresh potatoes and pan-fry them in a little bit of oil for 10 minutes. Then bake them in an oven at 450 degrees for 20-25 minutes until they reach your desired doneness. Cook white rice. Serve the beef alongside the rice and fries. If you'd like, top you meal with some fresh cilantro. Enjoy! Serves 4
